Meet Chef Jay
Executive Chef Jay Gundy is a true Detroiter, born and raised right here. Jay stumbled upon his culinary career or you might say it chose him. While attending college for a degree in automotive engineering, a job working for a local chef dropped in his lap. It was love at first bite and Jay switched gears quickly, moving on from automotive school to pursue his new passion in the culinary arts.
Jay began in a small local restaurant and worked his way to the kitchens of some of the finest restaurants in Michigan, leaving for short periods of time to greener pastures, but always returning to the city he loves, Detroit. The chef has learned from some of the best in the industry at such Detroit institutions as Forte, Tribute, The Whitney, Cafe Via, Townhouse in Birmingham, MI, and Cork Wine Pub.
Chef Jay is a purist, with a strong desire to stay true to all-natural, locally sourced staples as a basis for each menu item. “I utilize all the seasonal ingredients that Michigan has to offer and even forage for wild ingredients like mushrooms, ramps, asparagus and berries.”
Chef Jay works alongside many other talented and humble chefs, servers, bartenders, hosts and other staff at the Red Dunn Kitchen. Together they make magic happen.
